Shokupan (โชกุปัง) คือ ขนมปังอะไร ทำไมถึงฮิต?

Shokupan (食パン) ความจริงก็คือชื่อเรียกขนมปัง Sandwich สีขาวที่ทุกครัวเรือนชื่นชอบทานกันในตอนเช้านั่นเอง สิ่งที่ทำให้โชคุปังแตกต่างจากขนมปัง Sandwich ของชาติอื่นๆ ก็คือ เส้นใยขนมปังที่เนียนละเอียด โพรงอากาศขนาดเล็กจำนวนมาก ทำให้เนื้อขนมปังนุ่มละมุน และยืดเหนียว
เทคนิคที่ทำให้เกิดเนื้อขนมปังแบบนี้ คือ เทคนิค Yudane (ยู ดา เนะ) หรือก็คือการนำแป้งสาลี 1 ส่วน ผัดกับน้ำเดือด 1 ส่วน ทำให้แป้งเกิดการ Gelatinized หรือแป้งเมื่อผัดกับน้ำจะเป็นลักษณะคล้ายมันฝรั่งบดแห้ง แป้งจะมีความสามารถในการกักเก็บความชุ่มชื้นไว้ในตัวมากกว่าเดิม ทำให้ Shelf life ของขนมปังเก็บได้นานขึ้นโดยที่ไม่แห้ง โดยไม่จำเป็นต้องใส่ Fat (ไขมันอื่นๆเช่น เนย) เยอะเพื่อให้ขนมปังชุ่มชื้น
นอกเหนือไปจากเทคนิคแล้ว โชคุปังที่เนื้อละเอียดแสนอร่อยนั้น ต้องทำมาจากแป้งที่มีคุณภาพสูง เนื้อเนียนละเอียด และมีปริมาณ Gluten ที่พอเหมาะในการทำอีกด้วย โดยส่วนมาก ก็นิยมใช้แป้งที่ผลิตในประเทศญี่ปุ่นเพื่อผลลัพธ์ความเนียนอร่อยสูงสุด
คอร์สเรียนทำโชกุปัง ของ Sweets Cottage จะสอนคู่กับขนมปัง French Brioche (บริ-ยอช) ใช้เวลาเรียนทำขนมปังแบบตัวต่อตัวกับครู ถึง 2 วัน เพราะครูจะสอนแบบลงมือทำเองทุกขั้นตอน โดยคุณครูจะสอนแบบจับมือทำจนปั้นขึ้นรูปให้สวยกันเลยทีเดียว
